I’m very guilty of eating poorly at the end of the day. If I eat at all, it’s not usually something very healthy. Lunch is my main meal (man do I love me some lunch) so often I just don’t feel hungry. If I am, I’m too tired and lazy to do much cooking. Because of these things, I’m especially proud to have made up a fast, easy and healthy recipe that even my lazy ass is likely to make for dinner. The fact that there aren’t many dishes involved is a HUGE plus. Dishes are my least favorite thing, 2nd only to Steely Dan.

I’m going to have to set a rule for myself and start limiting my Martha recipes. That, or re-name my blog Marthaclecticims. Or maybe Good Things, Eclectic? That would be a huge pain, so I’ll probably stick with trying more recipes from other bakers and chefs instead.
It does have to be said, MS has some damn good recipes on her site. When I’m trying something new for other people and not just myself, I like to play it somewhat safe. Going Martha is safe. I had two vegetarian friends over for dinner this weekend and this recipe was a hit!If you have a grill, give this a try for a healthy but flavorful and filling main or side dish.

This St. Paddy’s Day came up so fast, and of course at a time I was slowing down on blogging. Often when I’m reading a Martha Stewart magazine (yes, I’ve come clean on that before!) I think about how much it must suck having to do decorating and baking for holidays that aren’t to come for another 6 months or so, in preperation for that holiday’s issue. Blogging isn’t nearly that intense and pre-planned (for most of us, anyways) but I’m starting to feel their pain! Maybe I’ll get on my game for spring and Easter so I won’t have a “you can do this for this holiday.. TODAY… get to it” post. Meehhhhhhh.
